The Higgins reception was beautiful this past weekend! The weather was very very hot, but the client had Cold Stone Creamery to assist in cooling them off with ice cream to go with the cake and cupcakes! Guest enjoyed the salad bar with 5 dressing choices and lots of great vegetarian toppings! It was another great menu for the vegetarian clients! Hors d'oeuvres consisted of Fresh Tomato and Basil Salad with Mozzarella, Spinach and Artichoke Spread, and Sweet Pear and Pecan Salad with Toast Points. And lots of Pastas and Sauces and Breads! The kids had Cheese Pizzas, Vegetarian Chicken Tenders and Vegetarian Pigs in a Blanket! All in all, a great day!

Vegetarian Wedding!

A salad bar with all of your favorite toppings is a great to showcase your vegetarian status! Lots of great color, fresh vegetables, and a wide selection to appease any crowd! There are lots of ways to introduce proteins and filling items through beans, chickpeas, hummus with crackers and breads, interesting cheeses, etc! Other great ideas for vegetarian stations beyond the fruit and vegetables would be our bruschetta station, a quesadilla station, mac and cheese station, or the traditional mashed potato, grits, or pasta bar! Congrats to the happy and healthy couple!

A Blue Onion - Chattanooga's Local Caterer!

Thank you to all of our Chattanooga weddings and events we have had the opportunity to cater! We have been so busy, we have not been able to make as many new posts as we would like! However, that is only a sign that business is booming in these economic times that people claim are the worst! So we are thrilled about that!
My new favorite hors d'oeuvre is an asparagus spear wrapped in a thin slice of beef tenderloin! Gone are the days of prosciutto! We are taking our menus and transferring them to incorporate high end products like beef tenderloin! Everyone is impressed with the high quality and, of course, the appearance of these adorable elegant mini meals...and with the fresh herb dipping sauce that accompanies the handy finger food, it's been a huge success since we introduced it in the early spring....a great way to keep meats on the menus and still keep your costs affordable! Pictured, here is another twist by serving it marinated in an orange ginger asian sauce if your prefer to spice things up a bit!

Trends in Catering
A Blue Onion has seen a trend toward healthier, more organic options for catering. Using fresh ingredients in a dish really adds another dimension to the flavor that our clients can really
distinguish! To the right, we have pictured our Salad Bars which are simply a classic vegetarian salad seated in an endive leaf for easy handling at any party! These bite size salads are a fantastic addition to buffets or even passed hors d'oeuvres! They add great color to a buffet as well as pack a punch a fresh flavors into a small bite. Of course, as with all of our items, we can customize these to include black beans and corn topped with tortilla ribbons for a Southwestern flair or maybe some crumbled bacon and blue cheese for a heartier introduction to the evening! The possibilities are endless and A Blue Onion is excited to get to share our ideas with you to make you catering experience a delightful one!
